Easy Reuben Casserole Recipe

I was thumbing through a book of recipes from Mt. Pisgah Baptist Church when I stumbled upon this Reuben Bake recipe. It actually comes from the mom of my best childhood friend. The first thing that caught my eye is the fact that is takes the deliciousness of a Reuben Pastrami sandwich and turns it into casserole form. Secondly, I know that Diana is a great cook and wouldn’t lead me astray.

Are you familiar with the ingredients of a Reuben Sandwich? It’s typically a grilled sandwich on Rye bread with either pastrami or corned beef, Russian or Thousand Island dressing, Swiss cheese and sauerkraut. The tang of the kraut balances out the sweetness of the dressing and the saltiness of the meat. Essentially, it’s a match made in heaven, and this Reuben Pastrami Casserole is no exception.

How to Make Reuben Casserole

Step by Step Instructions

  1. Layer drained sauerkraut, Swiss cheese, Thousand Island dressing, pastrami, and then the remaining cheese in a prepared 10 inch baking dish or casserole dish.
  2. Toss rye bread cubes with melted butter and dried parsley. Sprinkle over top the casserole.
  3. Bake at 350 degrees F for 10 minutes covered with foil, and then remove foil and bake for an additional 10 minutes uncovered.

Ingredients

  • 1 pound can sauerkraut, drained
  • 8 ounces Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 1-2 cups pastrami, cubed
  • 4 slices Rye bread, cubed
  • 1/3 cup butter, melted
  • 2 Tablespoons dried parsley

Instructions

  • Preheat oven to 350 degrees F.

  • Put drained sauerkraut loosely in a 10 inch dish that has been sprayed with nonstick cooking spray.

  • Sprinkle half the cheese over top. Layer dressing, pastrami and remaining cheese.

  • Toss the bread cubes with the melted butter and dried parsley.

  • Sprinkle over top the casserole.

  • Bake for 10 minutes covered with foil.

  • Remove foil, and cook for an additional 10 minutes or until the cheese is melted and the bread is slightly toasted.
