Sugar Free Pudding and Cream Cheese Frosting is a mouthful no matter how you think about it.
This frosting was actually quite easy to make though.

Sugar Free Pudding and Cream Cheese Frosting

This recipe is the first part of a recipe for a cake that I recently made.
Since the cake recipe would have been extensive had I included this in it, I thought that it would be best to separate the recipes. Separating the recipes would also give folks options as well.

I made this cake for my son on his birthday.
At the moment, he is really into anything waffles. This meant that the cake had to have layers made out of you guessed it. I chose a cream cheese based frosting as there can be an issue with frostings when frosting waffles as the frosting likes to sometimes sit funny in the waffle squares. Using a cream cheese consistency allows the frosting to glide over the waffle squares more evenly. When you are biting into a piece of waffle cake, getting a consistent taste of frosting can be important.

The pudding part of this was a bit of an experiment.

When I make a sugar free cheesecake, I almost always use the combination of cream cheese and pudding. Using pudding is almost a cheat if you ask me. The pudding already has a flavoring ans some sweetness to it. All you need to do is add some enhancements and whip it all up. Adding a tub of whipped topping is an option if you want to fluff this recipe up or made it more like a refrigerator cake.

I used a vanilla pudding in this recipe.
Using a vanilla pudding was purposeful for me because I did not want the frosting to compete with the chocolate cake itself. However, there are many other flavors of sugar free pudding. I just found sugar free cheese cake pudding and banana cream pudding for example. You can find a variety of flavors, including the ones mentioned, on Amazon.

  • Greek Yogurt- 1 cup (can sub in milk)
  • Cream Cheese- 1 (8 ounce) package, can use lower fat varieties
  • Optional- extract to complement flavor such as vanilla extract 1 tsp.
  • Also Optional- Whipped Topping -1 tub (8 ounces)
